1 tbsp. cold pressed oil
1 cup leafy greens – e.g. spinach
1 bell pepper (sliced)
Scotch bonnet/cayenne pepper
½ onion sliced
1 tsp dried chives
Salt to taste
Add onions and sauté for a few mins.
Add pepper and tomatoes.
Fry for a few minutes.
Add leafy greens and fry until wilted.
Crack eggs in a bowl, add salt and chives, beat until well combined.
Add eggs in veg mixture,
cover pan and cook on low heat until egg is set.♥️
